Grape variety: Pinot Noir
Breeding: In French oak barrels. The malolactic fermentation takes place in barrels with aging on fine lees. No fining, light filtration just before setting depending on turbidity. Bottling on a favorable lunar day.
Vinification: The grapes are destemmed, put in vats and cooled at 12° for 5-7 days (cold maceration) to extract the primary aromas.
Notes of tasting: The nose is ripe and fresh, marked by aromas of cherry and raspberry with spicy notes. On the palate, the finesse of the fruit and tannins contrasts with a concentration and density in the expression of the spices. Very nice balance.
Food pairing: Fine meats, grilled meats, thick veal chop, roast poultry, cheeses.
