Vinification: This cuvée is a blend of several Mâconnais terroirs. This set of old vines is vinified in concrete vats with native yeasts and part of which is destemmed to give a little more finesse and elegance to this cuvée. The limestone terroirs bring minerality and freshness to the terroirs
Food pairing:Goes well with a Hohenlohe flank steak matured for 30 days accompanied by a celery puree, grilled fermented cauliflower and a smoked eel emulsion with dried tomatoes.
