Grapes: Grenache 80%, Syrah 10%, Cinsault 10%
Vinification: Manual harvest. Scratched harvest. Fermentation temperature regulated around 28-30°C. Maceration of the berries in vats for around 1 month. Daily pumping contributes to the goal of balance.
Breeding: The cuvée is blended before ageing, for the latter we only use large oak containers (40 hl casks, 25 hl tapered vats, 600 liter demi-muids).
Tasting Notes: The brilliant ruby of the color introduces a nose of smoke, fur, red meat, undergrowth. The palate is built around ripe tannins extended by very ripe black cherries.
