Grape variety: 100% Riesling
Breeding: In tuns on total lees until spring, then on fine lees until bottling on August 20, 2018.
Vinification: Soft pressing for 5 hours in whole grapes. Light settling and fermentation in tuns for a month.
Tasting: This Riesling opens with intense notes of citrus fruits, lemon, pink grapefruit, gooseberries. The mouth is sappy taken up by a citrusy and salivating tension extending on a long and lemony finish.
Food pairing: Play on finesse and elegance, freshwater fish with fine and delicate flesh prepared in a terrine, pan-fried or en papillote; goat's or sheep's cheese.
